When we were in Ubud, we had this bowl of oats for breakfast every day and I really miss it. It’s perfect if you’re in a hurry or want something simple, but also healthy and delicious! I also had it for a snack and even for dessert sometimes.
The fruit in Spain is pretty good, but in Southeast Asia it’s out of this world. The mangoes and papayas were delicious, but I tried to eat as many dragon fruits or pitayas as I could because it’s hard to find this fruit in Spain and it’s also very expensive. We used white dragon fruit to make our tropical fruit salad, but pink dragon fruit has a stronger flavor, is more antioxidant, and makes everything so pretty with its bright pink color.
If you can’t find dragon fruit or it’s too expensive in your area, don’t worry! Any berry or fruit is fine, just use what you have on hand or what’s in season. All fruits are so healthy and rich in nutrients.

Instructions

Add the oats and boiling water to a bowl, stir and let sit for 2 to 3 minutes. Meanwhile, peel and cut the fruit.

Add the milk, coconut yogurt and chopped fruit, stir and enjoy your bowl of oats.

We used unsweetened soy milk, but feel free to use any sweetened plant milk you like or whatever sweetener you have on hand.

Best when fresh, store leftovers in a sealed container in the refrigerator for 1 to 2 days.
notes
- While instant oats are best for this recipe, any type of oats is fine.
- Feel free to use any other type of plant-based yogurt, such as soy or cashew yogurt.
- Use some berries or any other fruit instead of dragon fruit if you can’t find it or it’s expensive in your area.
