Description
Soft, moist avocado bread recipe made with fresh avocados, olive oil, and lemon. Naturally buttery without butter.
Ingredients
All-purpose flour – 1 ½ cups
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – ¼ tsp
Ripe avocados (mashed) – 2 medium
Sugar – ¾ cup
Eggs – 2 large
Vanilla extract – 1 tsp
Lemon juice – 1 tbsp
Olive oil – 2 tbsp
Milk – ¼ cup
Instructions
1. Preheat oven to 350°F. Grease loaf pan.
2. Mash ripe avocados until smooth.
3. Whisk avocado, sugar, eggs, oil, milk, vanilla, and lemon juice.
4. Mix dry ingredients separately and fold into avocado mixture.
5. Pour into pan and bake 45–55 minutes.
6. Cool and slice before serving.
Notes
Use lemon juice to keep avocado green.
Store airtight for up to 3 days.
Perfect with honey or smoked salmon.
