Who doesn’t love baked tater tots? I grew up eating Ore-Ida tater tots. These little ones were my favorite with 160 calories for 8 little ones. I ate more than 8 per serving. This Baked Tater Tots recipe has 60 calories for 2 servings.
As an adult, I still love these little tots. Fortunately, vegan baked tater tots are easy to make at home, and I eat as much as I want.

Although many people think that making homemade tater tots is difficult, baked tater tots are easy, with just a few ingredients.
- Sweet Potatoes: I make tots with both sweet potatoes and regular potatoes. The decision is yours. Or, use both sweet and baking potatoes.
- Zucchini: Zucchini has a mild flavor and combines with potatoes to make gluten-free and low-carb tots.
- Almond Flour: Almond flour is good in texture and a gluten-free option.
- Nutrition Facts: Nutritional yeast imparts a cheesy flavor and acts as a binder.

- Bell Pepper: I prefer freshly ground black pepper for the best flavor.

Baked Tater Tots
Innocent tater tots! What more could you ask for? Gluten-free, fat-free, vegetarian, and oh-so-delicious! You’ll love this baked tater tots recipe!

Peel a large sweet potato or regular baking potato and cut it into large, similar-sized chunks.
Place sweet potato slices in a pan and cover with water.
Boil Reduce heat to medium-low until sweet potatoes are tender when pierced with a fork (about 20 minutes).
Using a box grater, slice both zucchinis.
Using a paper towel, toss the zucchini to get rid of some of the water.
When the sweet potatoes are cooked, drain the water.
Place the sweet potatoes in a bowl and mash thoroughly with a fork until there are no large chunks.
Add grated zucchini.
Add flour, nutritional yeast and seasonings.
Stir together with a fork, mixing all the ingredients together.
The mixture should be damp. If it is wet, add more almond flour.
Preheat oven or air fryer to 400 degrees
Prepare a baking sheet with a silicone mat, parchment paper, or an air fryer pan.
Using your hands, form similar sized tater tots.
Space each tote about ¼ inch or less apart on the pan.
Make sure the oven or air fryer is hot and preheated before placing the tots.
Bake in the oven for 12-15 minutes, or air fry for 8 minutes until crispy.
The size of the tots may change during cooking.
