Baked white fish with vegetable salsa

Here’s a quick, easy, on-the-go meal you can make midweek or anytime. Baked white fish topped with a delicious and super flavorful vegetable salsa.

After you chop up your veggies for the salsa, dinner will be on the table in minutes!

I used flounder in this recipe because I came across some nice fresh fillets, flounder is a delicate fish with delicate flakes but honestly any white fish will do.

Cod makes a wonderful substitute, as does grouper, halibut, and sole, to name a few. If the fish is thicker and denser, you may need to adjust the cooking time a bit, but otherwise the delicious results are the same.

Baked white fish with vegetable salsa

A quick, colorful and flavorful fish dish.


  • 1½ pounds. White fish fillets of your choice such as cod, flounder, sole, grouper
  • 1 small zucchini, finely diced
  • ½ red onion, diced small
  • ½ each yellow and orange bell pepper, diced small
  • a good handful of pitted mixed olives, lightly chopped
  • a good handful of sliced ​​grape or cherry tomatoes
  • 2 garlic cloves, chopped
  • a handful of chopped parsley
  • olive oil
  • paprika
  • lemon slices


  1. Put all the chopped veggies in a bowl, add the parsley, garlic and everything for the salsa, then drizzle over enough olive oil to give it a fluffy consistency, salt and pepper to taste.
  2. Place your fillets in a glass casserole dish that has been drizzled with olive oil.
  3. Salt and pepper the fillets and sprinkle lightly with paprika.
  4. Cover the fillets generously with the vegetable salsa, cover the fish all over, add a few lemon wedges.
  5. Place in an oven preheated to 400 degrees for 15-18 minutes.
  6. NOTE: I used flounder, which is more tender and less dense, but if you’re using a thicker fish, adjust the time accordingly.
