A moist, sweet, and fruity banana blueberry bread recipe that’s simple to make and perfect for any time of day.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ cup melted butter
¾ cup brown sugar
2 large eggs
1 tsp vanilla extract
1½ cups mashed ripe bananas (about 3)
1 cup blueberries (fresh or frozen)
1 tbsp flour (for coating blueberries)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Whisk flour, baking soda, and salt in a bowl.
3. Mix melted butter and brown sugar until smooth.
4. Add eggs and vanilla extract; whisk well.
5. Stir in mashed bananas until combined.
6. Add dry ingredients; stir gently until incorporated.
7. Toss blueberries with flour and fold into the batter.
8. Pour into loaf pan; smooth the top.
9. Bake for 55–65 minutes or until a toothpick comes out clean.
10. Cool 10 minutes, remove from pan, and cool completely before slicing.
Notes
Use overripe bananas for maximum flavor.
Toss blueberries in flour to prevent sinking.
Store up to 3 days at room temp or freeze up to 3 months.
