This Blueberry Coffee Cake is an easy recipe that’s wonderful to enjoy with family and friends! This cake is prepared very quickly and tastes great. We love that it’s made in the 9×9 format so it’s a cupcake and is great for a small gathering or brunch.
Ingredients needed for the blueberry coffee cake:
all purpose flour
White granulated sugar
baking powder
baking powder
nutmeg
butter
milk
egg
vanilla extract
blueberry pie filling
As you can see, it’s made from very simple ingredients, most of which you have on hand. Super versatile as you can easily use cherry pie filling as well. The streusel topping really adds a great texture and we topped it with whipped cream and loved it. Tastes great with or without whipped cream and tastes great with coffee.
Simple replacements or additions:
- Can be filled with cherry pie filling
- Almond or lemon extract can also be used instead of vanilla
- Condensed milk could also be used instead of milk
- Could add nuts of choice to the batter
- Might add cinnamon to the topping

Blueberry Coffee Cake
This blueberry coffee cake is easy to make and perfect for brunch or a small gathering.
Servings: 9 portions
Ingredients for the blueberry pie:
- 1 1/4 cups all purpose flour
- 1/2 Cup white granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 8th tablespoon Butter or 1 stick or 1/2 cup melted
- 1/2 Cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 20-ounce can of blueberry pie filling
Ingredients for the Streusel Topping:
- 1/2 Cup all purpose flour
- 2 tablespoon butter melted

Whisk together the flour, sugar, baking powder, baking soda and nutmeg

Stir in melted butter, milk, egg and vanilla extract.

Spray a 9×9 casserole dish with cooking spray and spread the flour mixture evenly over the bottom of the casserole dish.

Spread the blueberry pie filling over the flour mixture.
