If you love cherry pie (so you’re human and you have taste buds) but hate baking pie, I’d like to introduce you to the tastiest and easiest cherry galette you’ve ever seen. This cherry galette is made with ripe, juicy cherries and a touch of almond extract, all folded into a self-sufficient (you don’t even need a pie pan!) buttery, flaky pie crust. Top it all off with a scoop of vanilla ice cream and you’re in for a great night. Or afternoon. Or tomorrow. I will not judge.
What is a cherry galette?
Galettes are a lot less complicated cakes, country cousins and frankly… I like them more than cakes. That’s where I said it. And I’ll say it again: galettes are better than cakes. In my opinion, the ratio of fruit to pie crust in a galette is just right. Plus, they take a lot less time and energy to make, the filling shines through, and they look super pretty!
Simply place your fresh cherries on a pie crust and fold in the sides for a gorgeous organic cherry galette that tastes just as delicious as pie for half the work. Everyone thinks they’re super chic when they’re sneakily a messy, open cake. I also request that you serve this cherry galette with a scoop of ice cream in the center. Or at least whipped cream.
Ingredients for cherry galette
This rustic galette is made with simple ingredients that really shine in the finished product. So make sure you use quality cherries and butter for best results! Here is your shopping list:
- all purpose flour

Which cherries are suitable for a galette? Fresh cherries? Frozen cherries?
Whenever we make a cherry dessert, we’re asked if we should use fresh or frozen cherries. You know that we make it a point to use fruit when it’s in season, so we would generally say fresh. Also, in our opinion, there really is nothing better than fresh cherries. However, we’ve tried frozen cherries and they still make a delicious galette.
Our advice? When you can (e.g. when it’s cherry season) use fresh cherries, but if you only have frozen cherries you can do that too!
Our tips for the perfect cherry galette
Galettes are much easier to prepare than cakes and tarts. A few important things to keep in mind when making a galette from scratch are:
- Spend the extra time preparing the homemade pie crust: I know it’s a bit more work, but SO worth it. You’ll get the best flaky texture and buttery flavor for a homemade pie crust, and the crust will hold its shape better in the oven. However, if you’re in a pinch, you can definitely use a store-bought pie crust.
- Don’t skimp on the coarse sugar: This is non-negotiable for me. Dusting the base with sugar will give your cake base a gorgeous golden brown, sweet and crunchy finish that’s both pretty and delicious!
- Use high-quality cherries: The quality of your fruit determines the success of your galette. We’ve made this pie with fresh and frozen cherries and both served their purpose, but there’s something special about fresh, juicy in-season cherries.
- Serve hot from the oven: This galette is best served hot out of the oven, when the crust is flaky and golden brown and the cherries aren’t too steep. If you have leftovers, we recommend reheating them in an oven preheated to 180°C for 15 minutes or until just hot!

Ingredients
for the cake base
- 1 1/4 cups all purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon Salt
- 1/2 Cup unsalted butter, cold and cut into cubes
- 2 To 3 tablespoons of ice water
- 1 Egg, to wash eggs
for cherry filling
- 1.5 Pound fresh cherries, rinsed and pitted
- 1/4 Cup granulated sugar
- 1/4 Cup cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
instructions
- First prepare the cake base. Put the flour, sugar and salt in a food processor. Place the cold butter cubes in the food processor and pulse until the mixture resembles wet sand and there are no large chunks of butter left.
- Add ice-cold water, one tablespoon at a time. When your dough has come together, stop adding water. You want just enough to bind the dough. Mix until well blended. Remove the dough from the food processor, shape into a flat, oval disc and wrap in plastic wrap. Refrigerate for at least 30 minutes, up to 2 days, or freeze for up to a month.
- After the dough has cooled and you are ready to make the galette, preheat the oven to 375°F and line a baking sheet with parchment paper.
- Dust a work surface with flour. Roll out your dough into a 12 inch circle. Place the dough on the prepared baking sheet. Place a 9-inch cake pan in the center of the circle and press down lightly. This will create an indentation that shows exactly how far you need to place your stuffing!
- Make the cherry filling. Pit the cherries with a cherry stoner or metal straw. Place the pitted cherries in a large bowl and add the granulated sugar, cornstarch, vanilla and almonds. Mix everything together to evenly coat the cherries.
- Place the cherries in an even layer in the center of the cake base. Lift the edges of the pie dough toward the center, folding every 3-4 inches.
- Beat the egg with 1 tablespoon of water and brush the crust with it. Sprinkle with coarse sugar if you like. Bake for 30-40 minutes until filling bubbles and crust is golden brown. Serve with vanilla ice cream!
