Moist, rich, and chocolatey, this Chrissy Teigen banana bread recipe combines ripe bananas, coconut, and pudding mix for an unforgettable loaf.
Ingredients
6 overripe bananas (mashed)
4 large eggs
2/3 cup canola oil
2 cups all-purpose flour
2 cups granulated sugar
1 package (3.5 oz) instant vanilla pudding mix
1½ tsp baking soda
1 tsp salt
1 cup dark chocolate chunks
1 cup shredded coconut
½ cup chopped walnuts (optional)
Instructions
1. Preheat oven to 325°F (163°C). Grease your pan.
2. Mash bananas until smooth.
3. Whisk eggs, oil, and bananas until combined.
4. In another bowl, mix flour, sugar, pudding mix, baking soda, and salt.
5. Combine wet and dry ingredients gently.
6. Fold in chocolate chunks, coconut, and walnuts.
7. Pour into pan and bake for 60–70 minutes.
8. Cool before slicing and serving.
Notes
Use very ripe bananas for best flavor.
Store at room temperature up to 3 days or freeze slices individually.
