I love a delicious homemade batch of soft, gooey, cinnamon-y cinnamon rolls.
But they can take hours to make. And I love making them… for the right occasion.
I have to think…How could I make a quicker and easier version of cinnamon rolls…
Answer: AS BANANA BREAD.
It starts with an easy banana bread recipe…then add cinnamon sticks and white chocolate chips to the batter…then coat the baked banana bread with a cream cheese glaze.
And you end up with this magical loaf of bread…
All the flavors of cinnamon rolls…but a lot easier to make and bake!
- 2 ripe bananas mashed with fork
- 1 large egg
- 1/2 Cup butter melted or softened
- 1 tsp Vanilla
- 1 1/2 cups Flour
- 1/2 Cup Sugar
- 1 tsp baking powder
- 1/2 tsp Salt
- 1/2 Cup cinnamon chips
- 1/2 Cup white chocolate chips
Cream Cheese Frosting
- 3 tablespoon cream cheese softened
- 2 tablespoon butter softened
- 2 tablespoon whipped cream or 1 tbsp milk
- 1/4 tsp Vanilla
- 1 Cup powdered sugar Add 1/4 cup more at a time for desired consistency
Preheat oven to 350 F. 2 – Lightly grease 9×5-inch loaf pans.
In a large mixing bowl, combine the wet ingredients in the order listed and mix well. Add the dry ingredients and shape the dough. Fold in the cinnamon chips and white chocolate. Crisps.
Pour the batter into the prepared casserole dish.
bread pan: Bake in the preheated oven for 55 to 65 minutes.
After about 10 minutes baking time, make the glaze as follows.
In a small mixing bowl, mix together the softened cream cheese, butter, heavy cream, and vanilla. Mix in the powdered sugar and a pinch of salt.
Once the bread is done baking, remove it from the oven and place the pan on the cooling rack.
Immediately pour the glaze onto the baked bread and spread evenly. Allow to cool for at least 10 minutes before slicing and serving.
