Ingredients
2 cups all-purpose flour
2 tsp baking powder
¼ tsp salt
1 cup shredded coconut (unsweetened)
¾ cup sugar
2 large eggs
½ cup melted butter
¾ cup milk or coconut milk
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F and line loaf pan.
2. Mix dry ingredients in a large bowl.
3. Whisk wet ingredients separately.
4. Combine wet and dry mixtures; fold gently.
5. Pour batter into pan and bake 45–55 minutes.
6. Cool for 10 minutes before slicing.
Notes
