Coronation Chickpeas (Creamy Curry Chickpea Salad)

Coronation chicken has been a popular dish in the UK since it was created in honor of Queen Elizabeth II’s coronation in 1953.

The vegetarian version uses chickpeas instead of chicken, along with little nibbles of delicious dry fruits and fresh herbs in a creamy curry sauce.

Step 1: Add all ingredients to a small mixing bowl.

Step 2: Mix well to combine. If you have time, refrigerate the mixture for an hour or so or even overnight. Otherwise, they are very good eaten directly!

While this creamy chickpea is delicious on all types of bread, I prefer to opt for a crunchy one, as it adds a nice bit of texture to the dish. Something like a crunchy baguette or piece of toast is perfect.
