Ingredients

4 large egg whites

1/4 tsp cream of tartar

1/2 cup low-fat cottage cheese

1/2 cup fresh or thawed blueberries

1 tsp honey or maple syrup (optional)

1/2 tsp vanilla extract (optional)


Instructions

1. Preheat oven to 300°F (150°C) and line baking tray.

2. Separate egg whites into large bowl.

3. Add cream of tartar; beat until stiff peaks form.

4. Blend cottage cheese, vanilla, and honey until smooth.

5. Mash blueberries lightly.

6. Fold cottage cheese mixture into egg whites gently.

7. Add blueberries and fold again.

8. Spoon mixture into rounds on baking tray.

9. Bake for 25–30 minutes until golden.

10. Cool completely before serving.

Notes
