  • ¼ cup maple syrup or honey
  • 1 scoop chocolate protein powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ⅓ cup dark chocolate chips (optional)
  • Pinch of sea salt

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Blend cottage cheese: In a blender or food processor, blend the cottage cheese until smooth and creamy.
  3. Mix wet ingredients: In a large bowl, whisk eggs, maple syrup, and vanilla. Stir in the blended cottage cheese.
  4. Add dry ingredients: Mix in cocoa powder, oat flour, baking powder, protein powder, and salt until just combined.
  5. Fold in chocolate chips: Stir in optional chocolate chips or add-ins like walnuts or peanut butter swirls.
  6. Bake: Pour batter into the prepared pan and smooth the top. Bake for 22–25 minutes until the center is set.
  7. Cool and serve: Let cool for 10–15 minutes, slice into squares, and enjoy!

Notes

To make them dairy-free, use plant-based cottage cheese and a vegan protein powder. For fudgier brownies, underbake by 1–2 minutes. These brownies store well in the fridge for up to 5 days or can be frozen for up to 3 months.
