Ingredients

  • 1 large French bread loaf
  • 1 lb cooked crawfish tails (peeled)
  • 4 tbsp butter
  • ½ medium yellow onion (chopped)
  • ½ medium bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1½ tsp Cajun seasoning
  • ¼ cup cream cheese or mayonnaise
  • 1½ cups shredded cheese (Cheddar, Pepper Jack, or mix)
  • 1 tbsp parsley (optional, chopped)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet.
  2. Melt butter in a skillet over medium heat.
  3. Sauté onion and bell pepper 3–4 minutes.
  4. Add garlic and cook for 30 seconds more.
  5. Stir in crawfish tails and Cajun seasoning. Simmer 5 minutes.
  6. Mix in cream cheese until smooth and creamy.
  7. Slice French bread in half lengthwise and place on baking sheet.
  8. Spread crawfish mixture over bread evenly.
  9. Top with shredded cheese.
  10. Bake for 12–15 minutes until cheese is melted and bubbly.
  11. Broil for 1–2 minutes for a golden top.
  12. Garnish with parsley and slice to serve.

Notes

Use shrimp or crab meat if crawfish isn’t available. Add jalapeños for heat or serve with hot sauce. Can be assembled a day ahead and baked before serving.
