Crockpot Fiesta Chicken – a deliciously easy Mexican-flavored chicken dish with just a handful of ingredients you probably already have in your pantry! Great for salads, tacos, burritos and more!
Life just gets hectic, so it’s so nice to have recipes to turn to that require so little effort that even the kids could make it for you! This is one of those recipes where you just throw everything in the slow cooker, turn it on, come back and you’re done.
The chicken is creamy, full of flavor, with a little pizzazz and is great on cilantro-lime rice or as a filling for tacos, burritos, quesadillas and more.

what you will need
- Chicken Breasts – You can use thighs if you like, but I find they don’t shred as well, so breasts just work better
- taco seasoning
- Black Beans – I like to drain and rinse my canned beans
- Diced tomatoes with green chilies (Rotel tomatoes)
- Green chillies
- Frozen Corn
- cream cheese
- Lemons
No more taco seasoning or a homemade version? I love this homemade taco seasoning because you can adjust the heat and salt level to your liking.

How to Make Crockpot Fiesta Chicken
- Pour the beans, tomatoes, green chiles, and corn into the bottom of your casserole.
- Arrange the chicken on top and sprinkle with the taco seasoning.
- Break the cream cheese into a few pieces and sprinkle on top.
- Put the lid on and cook on low for 4 hours.
- Remove the chicken from the crockpot and shred into pieces with forks.
- Stir the chicken back into the sauce until combined and the cream cheese is completely melted.
- Add just a little lime juice to brighten the flavor and serve.

Is that sharp? can i make it mild
The beauty of making this yourself is that you can make it as spicy or mild as you like. They sell Rotel tomatoes in mild, medium, and hot varieties these days. So choose the desired heat level. And if you really don’t like heat, skip the green chiles. They don’t add much heat, but they do a little.
If you really like it spicy, be sure to choose the spicy tomato variety, and you can even add a little ground cayenne pepper when you add the taco seasoning.

This is a super versatile recipe that you can really use in a variety of ways.
Can I do this low fat?
Yes, you can definitely use low-fat cream cheese in this recipe. That’s the only thing that actually contains fat. You could even omit the cream cheese and have it a little more “salsa” chicken than creamy.

- 1 (10 oz) can diced tomatoes with green chilies
- 1 (4 0z) can diced green chillies
- 1 cup frozen corn kernels
- 6 ounces cream cheese
- 2 limes
