Super easy recipe alert! This Dark Chocolate Banana Oat Mixer Muffins are my new favorite snack!

I hate baking and having to deal with 500 things to clean up. One bowl for wet ingredients, dry ingredients, blender, spatula, measuring spoons… does it ever stop?! Who has time for this? I don’t know about you, but when I’m done cooking, I want to eat… not clean.
Luckily with these muffins I can mix everything in a blender and have a lot less to do. Hallelujah!

HOW DO I MAKE DARK CHOCOLATE BANANA OAT MUFFLINS?
Start by mixing the following ingredients:
- 1 banana
- 2 eggs
- 2 cups of oats
- 1.5 teaspoons of honey
- 1.5 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon of vanilla
- â…“ cup Greek yogurt (or plain non-dairy yogurt)
- ¼ cup almond milk
- pinch of salt


Once you have a smooth consistency, pour the batter into your prepared muffin tins.
Top with desired amount of dark chocolate chips and bake at 350 degrees F for about 15-20 minutes or until golden brown and an inserted toothpick comes out clean.

Carefully remove the pan from the oven and allow the muffins to cool before attempting to remove them from the pan.
Once you have done this, store them in an airtight container in your fridge or freezer for future reference. I like to freeze them and pop one or two in the microwave if I want. This will re-melt the chocolate chips and make them gooey. Yummy!

Ingredients

- Start by mixing all the ingredients except the chocolate chips.
- When you get a smooth consistency, pour the batter into prepared muffin pans.
- Garnish with desired amount of dark chocolate chips.
- Bake at 350 degrees F for about 15-20 minutes.
- Remove from oven and allow to cool.
