Description
This moist and naturally sweet date nut bread is packed with chopped dates and toasted walnuts. It’s easy to make, freezer-friendly, and perfect with butter, coffee, or as a giftable treat.
Ingredients
1 cup chopped pitted dates
1 cup boiling water
1 tsp baking soda
1½ cups all-purpose flour
¾ cup brown sugar (packed)
¼ cup melted butter
1 large egg
1 tsp vanilla extract
½ cup chopped walnuts
½ tsp salt
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Combine dates and baking soda in a bowl. Pour boiling water over. Let sit 15 minutes.
3. In another bowl, mix flour and salt.
4. To the soaked dates, add sugar, melted butter, egg, and vanilla. Stir well.
5. Pour wet mixture into dry ingredients. Stir until just combined.
6. Fold in walnuts gently.
7. Pour batter into the pan. Smooth top.
8. Bake 50–60 minutes or until toothpick comes out clean.
9. Cool in pan 10 minutes. Then cool completely on rack before slicing.
Notes
You can substitute whole wheat flour for added fiber.
Swap butter for applesauce to reduce fat.
Freeze individual slices for up to 3 months.
