Earl Grey. We are using tea bags for this recipe to make things easier. If using leaves, add ½ tablespoon of Earl Gray loose leaves for each tea bag.

Don’t let Earl Gray steep for more than 6 minutes. Soaking for longer periods makes it taste bitter and astringent. In this recipe, instead of risking a bitter taste, we add more Earl Gray for a stronger flavor.
If you use a stove to boil water, you can boil a little longer than needed and then measure out 1 cup.
Boiling water with a microwave will take between 1.5 and 3 minutes, depending on the power of the microwave you are using. But be careful when using this method: to avoid burns, put a wooden spoon or toothpick in contact with the water.
