Fresh lemon juice is ideal for the salad dressing. Flavors are brighter and fresher compared to bottled lemon juice.
Your couscous should come with cooking instructions. If not, the usual ratio of couscous to water is 1 cup couscous to 1 and 1/2 cup water or broth. Bring the liquid to a boil, then stir in the couscous and cook until all the liquid is absorbed.
Make sure to cut your pickles into bite-sized pieces so you don’t just end up with a spoonful of pickles!
If you don’t have cherry tomatoes, you can try grape tomatoes or plum tomatoes.
