I LOVE soups! Whether they are healthy, like Butternut Squash Soup or Cauliflower soup – or hearty like Italian Wedding Soup or Cheesy Potato Soup…I love them all!
But I have to say, one of my favorite soups of all time is one Simple tomato soup. I love the creaminess and the taste of it. Especially when you dip a grilled cheese sandwich in it!
Is Homemade Tomato Soup Healthy?
Tomato soup is an excellent source of antioxidants, including lycopene, flavonoids, and vitamins C and E.
Adding antioxidants to your diet is known to reduce the risk of cancer and inflammation-related diseases like obesity and heart disease.
Do you need to peel tomatoes for tomato soup?
Tomatoes don’t need to be peeled. In fact, the tomato skins intensify the flavor and add extra nutrients to the soup.
The roasting of tomatoes, peppers, onions, basil and garlic makes this soup truly unique. There is definitely an added flavor boost.
I love adding heavy whipping cream and balsamic frosting to this recipe as well. Sprinkle with parmesan and you have a perfect soup!
What can I add to my tomato soup to make it even better?
Here are a few ways to upgrade your soup:

Easy tomato soup recipe
This is the easiest tomato soup recipe you will ever make! Tomatoes, peppers, onions, garlic and spices are roasted and then blended into a delicious, simple soup.
Servings: 3 cups
Place tomatoes, peppers, onion, garlic (halved), thyme and basil on a baking sheet. Season with salt, pepper and oregano. Drizzle with olive oil and mix everything together.
Roast for 400ºF. 30 minutes, stir if necessary.
Remove from the oven and let cool for a few minutes. Combine all of the roasted tomato mixture in a blender, making sure to remove each clove of garlic from the skin and puree until combined.
Place tomato mixture in a saucepan and add chicken broth, tomato juice, parmesan, tomato paste, heavy cream, balsamic glaze and sugar. Taste and season with salt and pepper.
Serve with a sprinkling of parmesan and a drizzle of olive oil and enjoy!
