Ingredients for the flank steak marinade

  • Worcester sauce: Many steak marinades contain Worcestershire, and this flank steak marinade also contains Worcestershire. Because it’s a vinegar-based sauce with ingredients like anchovies, garlic, and tamarind, it makes a salty sauce that’s perfect with steak.
  • Balsamic vinegar: Not only does balsamic vinegar add a touch of sweetness without adding sugar, but the acidity in the vinegar helps break up the meat and promotes tenderness.
  • Chopped Garlic: Adding fresh garlic to any marinade adds a lot of flavor. We do not recommend substituting garlic powder.
  • Olive oil: The olive oil binds all the ingredients of the steak marinade together.
  • Fresh lemon juice: A little lemon juice will loosen up this marinade and help tenderize the steak before cooking.
  • Ground Peppercorns: We highly recommend using freshly ground peppercorns in this marinade to give the flank steak an amazing peppery flavor.
  • Kosher Salt: Salt is necessary to make the meat more tender when marinating.

How to prepare flank steak marinade

  1. Combine: Just put all the ingredients in a bowl or jar and mix everything together.
  2. Marinate: Place your steak in a bowl or large bag and pour the marinade over it. Make sure all sides are nice and coated.
  3. Let’s sit: Let the flank steak marinate for at least 30 minutes or even overnight. Place the steak in the refrigerator if marinating for more than 30 minutes.

How long should steaks marinate?

We recommend marinating steaks for at least 2 hours or even overnight. The longer you marinate steaks, the more tender your steak will be. Unlike salmon, you can marinate steaks a little longer without lemon juice cooking the steak.

You’ve probably heard that flank steak is a tough cut of meat, and in some cases it is. It can be tough and chewy because it’s a very lean cut of beef, but when properly tenderized and seasoned, flank steak is super flavorful and tender.

Don’t skip the meat tenderizer: Not only is it important to pound the flank steak so that it’s all the same thickness and cook evenly, but it also helps tenderize the steak so it doesn’t become as chewy.

Plan enough time for marinating: Let your flank steak marinate for at least 30 minutes. But please note: the longer the flank steak is marinated, the more tender it will be. Feel free to prep your flank steak and let it marinate in the fridge overnight.

Double or triple to serve a crowd: Because this marinade is made from a short list of simple ingredients, it can easily be doubled or tripled when serving steaks to a large crowd.

Steak internal temperature

Everyone is different when it comes to how they like their steak. We’re big fans of a medium-rare steak, but check the internal temperature of your steak when it’s almost done.

Rarely: 130F

Half done: 140F

Middle: 155° F

Well done: 165° F

Remember: while your steak rests after cooking, the internal temperature will continue to rise by about 5°F.
