When our river guide visited the Yanshou River in China a few years ago, he took his small boat to this small primitive village which had an outdoor restaurant mainly for locals. We felt a little out of place and had no idea what was on the menu so we just pointed to what other people were eating and those pea sprouts were one of the things that arrived. I was blown away.

Pea shoots are the young, climbing tendrils of peas before they grow large enough to form pea pods. They taste like a cross between peas and spinach and are such tender and lovable little creatures that I almost feel guilty eating them.

Ingredients in the Pea Sprouts recipe

  • peanut oil– or other highly heatable oil. Peanut oil makes for great flavor here, but since the pan doesn’t get too hot, olive oil will do just fine.
  • Garlic cloves– Give a nice taste boost.
  • shallot adds a subtle sweetness and depth
  • Chili Flakes or whole arbol chilies – for sharpening, both optional
  • Young Pea Sprout You will need more than you think; When fresh, they cook to about 1/5 of their volume. Keep in mind that mature pea shoots can be overly fibrous and stringy. So if you use them, hack them first.
  • salt and pepper taste good
  • Mirin or Chinese wine or dry sherry– Traditionally Chinese wine also called Shaoxing is used but I used Mirin, sweeter but for my taste buds I prefer the Mirin! As you wish.

Instructions for fried pea sprouts

Step one: Prepare your shallot and garlic and gather all the ingredients at the stove. The cooking process only takes 5 minutes. So be ready as soon as you heat the pan.

Step two: Heat the oil in a wok or large skillet over medium-high heat. Add the shallots and garlic and sauté, stirring frequently, until fragrant and just golden brown, 2 minutes. Add the chili flakes and sauté for 30 seconds. Add the young pea sprouts.

Step three: Stir-fry the pea sprouts for 30-60 seconds and season with salt and pepper. Drizzle with mirin and cook for 30 seconds. Turn off the heater.

Serve immediately. I can’t tell you how much I love this Pea Sprouts recipe – so quick and easy, yet so flavorful! It feels very nourishing to the body.

  1. Prepare all the ingredients and collect them near the hearth.
  2. Heat oil in a wok, large skillet, or cast iron skillet over medium-high heat.
  3. Add the garlic and shallot and stir-fry 2 minutes, until fragrant and lightly golden. Add chilli flakes and stir-fry for 30 seconds.
  4. Add pea sprouts. Stir-fry for 1 minute and season with salt and pepper. Add the mirin and simmer for a final minute.
  5. Serve immediately!

Remarks

I prefer the sweet taste of mirin here, it’s lovely – but Shaoxing wine is more traditional and less sweet. Feel free to use Chinese Shaoxing wine or sherry.
