It’s a pizza party kind of night!  But not just any kind of pizza….my Gluten Free BBQ Garden Pizza!  This recipe has a soft, flaky crust that is overflowing with healthy vegetables and tangy bbq sauce.  You will never look at pizza the same way again.

I’m always a little skeptical when it comes to boxed (gluten free) pizza crust mixes.  I never know if they will be super thick and chewy, or fall apart while I’m eating them.  However, I have found a mix that turned out better than expected. Pillsbury Gluten Free Pizza Mix is my pizza crust of choice.  It was perfectly crisp and light, even after being smothered in bbq sauce and loaded with veggies.

WHAT INGREDIENTS DO I NEED?

  • Pillsbury Gluten Free Pizza Mix + ingredients required on package
  • Preferred BBQ sauce
  • Canned corn
  • Red onion
  • Roma tomato
  • Fresh broccoli
  • Shredded Mozzarella
  • Mushrooms
  • Olive oil
  • Minced garlic
  • Fresh parsley
  • Cracked black pepper

HOW DO I MAKE GLUTEN FREE BBQ GARDEN PIZZA?

Start by preparing the crust based on the package instructions.

When using a pizza mix, I prefer to use a spring form pan so that I can make the pizza crust perfectly round, instead of free form. However, you can always use a pizza stone, or baking sheet to make your pizza crust. Use whatever you have, it will still be delicious!

(A spring form pan is especially useful if you are making a deep dish pizza and you don’t want to worry about cutting it out of the pan. The spring form side will pop right off, leaving you with a beautiful thick crust, loaded with toppings.)

In a small skillet, begin to heat 2 tablespoon of olive oil. Sauté ¼ cup of chopped red onion and ½ cup of chopped broccoli with ½ teaspoon minced garlic. Once the veggies are slightly tender, remove from heat.

When your crust is prepared and “pre-cooked” according to the package, top it with 3-4 tablespoon of your favorite BBQ Sauce. Then layer with the sautéed onion/broccoli mix.

Top with desired amount of sliced mushrooms, corn, and chopped tomato. Sprinkle everything with 1 cup of shredded mozzarella cheese and bake for another 8-10 minutes. Or until the cheese is melted and the crust is slightly browned.

Carefully remove the pizza from your oven and top with cracked black pepper and fresh parsley.
