Soft and sweet, this easy recipe for {Gluten Free} Sweet Potato Bread is a tasty treat!

Who wouldn’t want a nice, big slice of {Gluten Free} Sweet Potato Bread? Incredibly moist, delicious and bursting with sweet cinnamon flavor, this no-kneed bread will soon become your new favorite!Â
Instead of opting for the traditional homemade breads made with fruit, such as apple-sauce, banana or lemon. Try out this unique version made with sweet potatoes.Â
A thick slab is delicious with your morning coffee or tea, but also makes a special afternoon snack.

- 1 cup shredded sweet potato
- 2Â eggs
- 1 cup gluten free flour
- ⅓ cup sugar
- ¼ cup coconut oil- melted
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt

HOW DO I MAKE GLUTEN FREE SWEET POTATO BREAD?
Start by grating enough of a large sweet potato to fill 1 cup. I used a cheese grater, but you can use a mandolin or food processor.
In a large bowl, whisk together the flour, sugar, cinnamon, baking soda and salt.
Stir in eggs, sweet potato, coconut oil and vanilla extract. Mix until you have a thick batter.

Pour the batter into a prepared loaf pan. Sprinkle with additional sugar and cinnamon, if desired. Bake at 350 degrees F for approximately 20 minutes. Remove and let cool before removing from pan.
