Grate the cucumber with the larger holes of a grater. Then extract as much of the liquid as possible by squeezing with your hands or a clean tea towel. Place the drained cucumber in a medium bowl. Add the rest of the ingredients, including Garlic, Greek yogurt, red wine vinegar and extra virgin olive oil. Mix thoroughly and season with salt and pepper. Serve the sauce immediately with fresh crusty bread, flatbread or grissini. Store leftover tzatziki in an airtight container in the refrigerator for up to 3 days.

Greek tzatziki sauce

  • 3.5 oz (100 g) cucumber
  • 1 clove of garlic chopped
  • 1 Cup (240 g) Greek yogurt tense
  • 2 tablespoon (30 g) extra virgin olive oil
  • 1 tsp (5 mL) Red Wine Vinegar
  • Salt
  • freshly ground black pepper


Prepare the cucumber.

  • Use a seedless cucumber like the English cucumber, or if using a seeded one, be sure to remove the seeds to get the sauce consistency you want.

  • Grate the cucumber with the larger holes of the grater. Squeeze the grated cucumber well to remove as much liquid as possible. Simply use your hands or put the grated cucumber on a clean tea towel and squeeze it out well.

Prepare the tzatziki sauce.

  • Place the drained cucumber in a medium bowl.

  • Add the remaining ingredients, garlic, strained Greek yogurt, red wine vinegar and extra virgin olive oil. Mix to combine.

  • Season with salt and pepper.
