Description

These soft and chewy breakfast blondies are made with peanut butter, Greek yogurt, oats, and naturally sweetened for the perfect morning treat. Packed with protein and flavor, they’re quick to make, kid-friendly, and freezer-safe!

  • 1 cup natural peanut butter (creamy or crunchy)

  • 1/2 cup plain Greek yogurt

  • 1/3 cup maple syrup or honey

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup quick oats or oat flour

  • 1/4 tsp baking soda

  • Pinch of salt

  • Optional: 1/4 cup mini chocolate chips or chopped nuts


Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper or grease lightly.

  • In a medium bowl, whisk together peanut butter, Greek yogurt, maple syrup (or honey), eggs, and vanilla until smooth.

  • Stir in oats (or oat flour), baking soda, and salt until well combined. Fold in chocolate chips or nuts if using.

  • Pour the batter into the prepared baking dish and spread evenly.

  • Bake for 18–22 minutes, or until the center is set and edges are golden.

 

  • Let cool completely before slicing into squares. Enjoy!

Notes

  • Use oat flour for a smoother texture, or keep whole oats for more bite.

  • These freeze well! Store in an airtight container and freeze for up to 2 months.

  • For extra protein, add a scoop of vanilla protein powder and reduce oats slightly.
