Homemade Garlic Aioli – Dinners, Dishes, and Desserts

This Homemade Garlic Aioli will take your sandwich game to a whole new level. It is super easy to make, ready in 5 minutes and the perfect balance of flavors.

This is a shortcut version of garlic aioli that you can make in just 5 minutes. It has been my go-to recipe for years, and is the perfect addition to your Classic Hamburgers, Chicken Club Wraps, to use on your Turkey Club Sandwich or even to use as a dip. This takes mayo to a whole new level with lemon and garlic that just make it extra delicious.

What Is Aioli

Aioli is a sauce that is an emulsion of garlic and olive oil. It is originally from Spain and the Mediterranean area. Spain, Italian and parts of France each have their own slight variations.

Mayo is a shortcut to making aioli, since it is often an emulsion of vegetable oil, garlic, and egg. So technically if you want to make true from scratch aioli, you would start with olive oil and garlic and emulsify and season from there. It is over the top delicious, but this version takes less than 5 minutes, and uses ingredients and supplies that everyone has on hand, so it is a shortcut you can make any day of the week!

  • Mayo – you want to use full fat and if you can use the kind with olive oil even better
  • Garlic
  • Lemon Juice
  • Olive Oil
  • Salt
  • Black Pepper

How To Make Garlic Aioli

  • Measure all of the ingredients into a small bowl.
  • Whisk until very well combined.
  • Store in the fridge for an hour before serving.

For a milder garlic flavor, but my actual favorite way to make it use Roasted Garlic in place of raw garlic. There is just something about roasted garlic that makes it extra amazing.

How To Use Garlic Aioli

Because aioli is basically just a flavored mayo, you can use it anyway you would traditional mayo. It is great on sandwiches or burgers, you can use it in dips, anytime you just want a little extra flavor to your mayo.

Recipe Tips & Variations

  • Aioli is really a blank canvas you can mix up and make your own. Add Sriracha for a little spice, add in chopped basil or Spinach Pesto for a twist. You could use flavored oil for even more flavor. Lots of ways to mix it up to make it fit whatever you are using it for.
  • Use full fat mayo. For the best results you really want to use a full fat mayo. And the variety that is made with olive oil works really well with aioli, since the from scratch version starts with an olive oil base.
  • Fresh lemon juice is always the best, but in a pinch if you only have bottled it will work.
  • If it separates a little while sitting in the fridge, just whisk together again before using.
  • Store Garlic Aioli in an airtight container in the fridge for up to 5 days.

  • 1/2 cup mayo
  • 1 clove garlic, grated
  • 1 Tablespoon lemon juice
  • 1 teaspoon olive oi
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Measure all of the ingredients into a small bowl.
  2. Whisk well until well combined and smooth.
  3. Store in the fridge for at least 60 minutes before serving.


Store covered in the fridge for up to 5 days.
