Short grain brown rice – Short-grain brown rice tends to be more starchy than long-grain brown rice. It tends to end up getting soft, sticky, and fluffy. Cooking time for short grain brown rice is 20 minutes, but you’re releasing the pressure quickly.

Brown long grain rice– long-grain brown rice is less starchy than short-grain brown rice and comes out a little drier than other types of rice. Cooking time for long grain brown rice 20 minutes, but of course you have to release the pressure for 10 minutes.

If your rice is still mushy, you most likely added too much water or allowed the Instant Pot to naturally release for too long. Unfortunately, there is no way to fix congee. We recommend making a mush out of the leftovers!

Why is my rice still crisp?

If your rice is still crispy, you didn’t add enough water or the Instant Pot wasn’t depressurized properly. Unfortunately, there’s no way to ensure you don’t get the fire alert if you try to continue cooking the rice.

  • Put the brown rice in a fine sieve and rinse under cold water until the water runs clear.

  • Add the rice and water to the Instant Pot and stir the rice and water together. Make sure all of the rice is covered with water.

  • Cover and seal the Instant Pot’s pressure valve.

  • Set the Instant Pot to high pressure and cook for 20 minutes.
