This Italian cream cake is one of my favorite cakes and it never lasts long when I make it. If you like coconut, you will love this cake. Required Italian cream cake ingredients:
butter
White granulated sugar
egg yolk
all purpose flour
baking powder
buttermilk
vanilla extract
Coconut (I used the sweetened coconut flakes)
pitchnut pieces
protein
Ingredients Cream Cheese Frosting:
cream cheese
butter
vanilla extract
powdered sugar
This cake takes some work, but let me tell you upfront… it’s worth it! It’s so good and probably in my top 5 for my favorite cakes. It’s the perfect cake for any holiday gathering and everyone who has ever tasted this classic loves it! Be sure to add this to your recipe list.
Cake Baking Tips: Always follow the recipe and do not open the oven door 10 times while the cake is baking as this may cause the cake to fall. Check the center of the cake with a toothpick to see if it’s done. Ovens vary. Blend just until all the ingredients are incorporated. Over and under mixing can result in cakes having a chewy texture.

Italian cream cake
This Italian cream cake is absolutely delicious!
Servings: 1 Cake
- 1 Cup butter or 2 sticks or 16 tablespoons softened
- 1 3/4 cups white granulated sugar
- 3 egg yolk
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 Cup buttermilk
- 2 teaspoon vanilla extract
- 2 cups coconut I used the sweetened coconut flakes
- 1 Cup pitchnut pieces
- 5 protein
Ingredients for the cream cheese frosting
- 1 8-ounce packet of cream cheese, softened
- 1 Stick butter or 8 tablespoons or 1/2 cup softened
- 1 teaspoon vanilla extract
- 3 3/4 cups powdered sugar

Cream together butter, sugar and egg yolk. Whisk together the flour and soda and add to the creamy mixture along with the buttermilk and vanilla extract. Mix well. Stir in coconut and nuts. Beat the egg whites until stiff and fold into the cake mixture.

Spray three 8-inch cake pans with cooking spray. Divide the mixture between the three pans and bake in the preheated 350 degree oven for 25 to 30 minutes until the center is done. Frost with Cream Cheese Frosting recipe below.
