Description
A moist and naturally sweet mango bread made with fresh mango, cinnamon, and Greek yogurt. Easy to bake and great for breakfast or dessert.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
1 tsp ground cinnamon
1 ½ cups ripe mango, diced
2 large eggs
¾ cup granulated sugar
¼ cup brown sugar
½ cup melted unsalted butter
1 tsp vanilla extract
½ cup Greek yogurt
Optional: ½ cup chopped walnuts or coconut flakes
Instructions
1. Preheat oven to 350°F. Grease or line a 9×5 loaf pan.
2. In a large bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
3. In a separate bowl, mix eggs, sugars, butter, vanilla, and yogurt.
4. Fold wet mixture into dry ingredients until just combined.
5. Gently stir in mango and optional add-ins.
6. Pour into pan, smooth top.
7. Bake for 50–60 minutes or until a toothpick comes out clean.
8. Cool for 10 minutes, then remove from pan and cool on wire rack.
Notes
Use ripe but not watery mangoes for best flavor.
Store in airtight container for 3 days or refrigerate for 1 week.
Can be frozen in slices up to 2 months.
