Sunday – Loaded Sesame Ginger Salmon Salad – one of my favorite dishes ever for dinner.

Monday – Skillet Chipotle Enchilada Casserole – just the tiniest treat but EASY to make as you only need 1 pot!!

Tuesday – Tonight it’s Snap Pea Pasta!

Wednesday – Mexican corn and quinoa salad

Thursday – Chicken Tawook Quinoa Bowls. Plus, they double up for lunch the next day.

AND Bonus: Friday Dinner Party will look like this Salmon Shawarma Dinner Party!

Breakfast – Acai bowls are always around and I will load them up with strawberries, bananas, kiwis, peaches or anything else I can get my hands on at the market!

Dessert – Banana cream cake parfait!! There are bananas in it – basically it’s a healthy food 🙂
