Microwave breakfast burrito with potatoes

On the threshold of Mother’s Day, I thought about what my wife would most like to do for me. While I can cook a lot of good brunch dishes, she’s a breakfast burrito lady at heart. After all, is there anything better than a delicious breakfast burrito to start the day?

Luckily, you don’t need a special occasion to make these microwave breakfast burritos. Now, some people may scoff at the microwave, but I assure you, the microwave was made for breakfast burritos.

It allows you to quickly cook all the ingredients and then combine them into a steaming, soft flour tortilla. It truly is a modern marvel of a recipe, and one that can be made in your kitchen faster than you would have to stop at a burrito shop on your way to work!

Grab it and let’s make breakfast burritos!

Why the microwave works for breakfast burritos

In my opinion, the best breakfast burritos consist of fluffy, cheesy eggs, potatoes, some kind of green chilli sauce, and some good veggies. Those are essential. Of course, meat is often included in breakfast burritos, but I could take it or leave it.

All of the ingredients for my dream breakfast burrito microwave really well, and then you can also lightly steam the tortilla in the microwave to make it really flexible and easy to roll.

It’s a win-win and makes this recipe really doable on a busy Tuesday.

But let’s start with the potatoes!

How to cook potatoes in the microwave

The trick to cooking these potatoes in the microwave is to dice them fairly small, add some water, and add some kind of hot Tex-Mex sauce to them as well. When they come out of the microwave, you can mash them slightly to mix the flavors.

About three minutes should be enough to tenderize your potatoes, assuming you have a decent, modern microwave and you’ve diced your potatoes into roughly 1/4-inch cubes. In the worst case, you might need an extra minute.

I love blending all the ingredients together and using that as a kind of glue layer for the burrito.

How to make fluffy eggs in the microwave

It wouldn’t be a breakfast burrito without some eggs. You actually only need a single egg for this burrito, although you could use two and double it to make two burritos.

In a microwave-safe bowl, combine the diced peppers, corn, and scrambled eggs. Microwave on high for 90 seconds and the egg will be very fluffy and light. I would recommend seasoning the egg with a pinch of salt as I like to season all my layers individually.

The microwave is great for basic scrambled eggs as it produces a lot of steam and will puff up the egg as it cooks.

How to combine the breakfast burrito ingredients

Once you’ve boiled your eggs and potatoes, all that’s left to do is roll it all up in a flour tortilla!

To make the tortilla easier to roll and to melt some cheese, I recommend mashing some avocado on top of the tortilla and adding a pinch of cheese. Then microwave for about 30 seconds. This will fluff up the tortilla and melt the cheese!

Then you can add your potato and egg mixture and more cheese! Season with salt and pepper and roll up! When the filling ingredients have cooled, you can microwave them for an additional 30 seconds to ensure they are piping hot.

Roll up the burrito tightly by folding in the ends and then rolling into a tight cylinder.

Ingredients and substitute ideas

As you can probably imagine, you can substitute whatever you want for these burritos. Here are some ideas!

  • Add other Tex-Mex veggies like onions, black beans, or more peppers.
  • Add pre-cooked proteins like crispy bacon, crumbled sausage, or ham.
  • Use frozen hash browns instead of diced potatoes.
  • Add sour cream to the burrito if you want a creamier filling.
  • If you want to make a bunch of these you can freeze them once rolled, although I prefer them fresh.

That probably doesn’t come as a shock, but these are amazing as on-the-go breakfasts. Once you’ve wrapped your burrito tightly, wrap it in aluminum foil to keep it hot and it will stay warm for 15-20 minutes.

I prefer foil over paper towels, which get soggy easily and don’t hold heat as well, but work well in a pinch.
