Parmesan Crusted Red Snapper


1 1/2 lb red snapper fillet, cut into 6 equal pieces

1 tablespoon butter

1 tablespoon olive oil

1 garlic clove, chopped

salt and pepper to taste

1 cup grated parmesan cheese


Preheat the oven to 400 degrees F and oil a 9×13 inch baking pan.

Place the fish fillets in the pan, skin side down, and sprinkle with salt and pepper.

Heat the butter, oil and garlic in the microwave for about 30 seconds.

Spread the mixture onto the fillets and press the Parmesan cheese evenly onto the fish fillets.


Place the pan in the oven and bake for 18-20 minutes.
