How to Make Pesto Chicken Sandwiches

Cut the chicken into thin chops.
Season and sauté in olive oil until cooked.
Gather your ingredients and prepare to assemble the sandwiches.
Spread the mayo and pesto on the inside of the ciabatta rolls.
Add the chicken and cheese slices.
Add a pop of color with the gorgeous red tomato.
Optionally add a piece of lettuce.
Place on the grill
Add the top, then apply a little pressure to get the grill marks on the bread and melt the sandwich together.
Flip and repeat.
Cut the grilled sandwiches into meal-sized portions.

- 2 Boneless chicken breast
- 1 el Italian spice
- salt and pepper taste
- 1 tablespoon olive oil
- 4 Ciabatta rolls
- 4 tablespoon mayonnaise
- 6 tablespoon Pesto
- 4 slices mozzarella cheese
- 1 Roma tomato thinly sliced
Halve the chicken breasts lengthways to obtain 2 chicken chops from each chicken breast. Season both sides of the chicken with Italian seasoning, salt and pepper.
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Cook the chicken on both sides for about 5 minutes or until the chicken reaches an internal temperature of 165 degrees.
Take the chicken out of the pan.
Assemble the sandwiches by slicing the ciabatta rolls in half. Spread about 1 tablespoon mayonnaise on one half of each roll. Spread about 1¼ tablespoons of pesto on the other half of each bun, then place a chicken cutlet on top of each sandwich.
Add 1 slice of mozzarella to each sandwich, followed by a slice of tomato and romaine, if desired.
Cover the sandwich with the ciabatta roll with pesto. Brush the top roll lightly with olive oil, then return the sandwiches to the pan. Cook each sandwich for 2 minutes per side or until the mozzarella is completely melted.
Serve immediately and enjoy!
