The ingredient list is short. This is one of mine Go-to recipes when i want to do it an impressive yet quick weeknight dinner for my family and friendswithout spending hours in the kitchen. It is a restaurant quality dinner – Perfect for entertaining guests when you have company. Serve simple shrimp scampi over basil pasta or on creamy sundried tomato risotto. Or simply add it as a topping to salads, such as a mango and avocado salad or a simple spinach salad.

Ingredients

- 2 tablespoon olive oil
- 1.5 Pound raw shrimp peeled, deveined, tail removed (large – about 15-20 per pound)
- ½ teaspoon Italian spice
- ½ teaspoon red pepper flakes
- ¼ teaspoon Salt taste good
- ¼ teaspoon freshly ground black pepper

- 5 cloves Garlic chopped
- ¼ Cup freshly squeezed lemon juice 1 large lemon
- ½ Cup dry white wine
- 3 tablespoon Salted butter

- 3 tablespoon capers
- 3 tablespoon Lemon peel
- ½ Cup fresh basil chopped

Heat a large, high-sided skillet over medium-high heat until hot. Add olive oil – it should flow easily but not sizzle or burn. Add shrimp without overcrowding (you may have to cook in two batches). Sprinkle shrimp with seasoning (Italian seasoning, red pepper flakes, salt and pepper).

Cook the shrimp, turning once or twice, over medium-high heat until pink in color, about 3-4 minutes total. Don’t overcook.

Take the shrimp out of the pan.

In the same (now empty) pan you used to cook the shrimp, add minced garlic, lemon juice, and white wine and deglaze the pan. Reduce heat and cook until sauce has reduced slightly and garlic is soft – about 2 to 3 minutes. Remove from the heat and fold in the butter, remove from the heat and allow to melt in the sauce.
Assembly

Add cooked shrimp and 2 tablespoons capers to skillet with lemon garlic butter sauce and stir over low heat.

When serving, top with the remaining 1 tablespoon (or more) capers, chopped fresh basil, and lemon zest. If you like, squeeze some lemon juice over the shrimp.

cooking tips
- If using raw shrimp, make sure they are peeled and deveined.
- Do not overcrowd the number of shrimp. When searing, make sure to space the shrimp as far apart as possible in the pan. This will ensure that the shrimp are actually seared and not steamed. You may have to work in batches. Also, pay close attention to the cooking times so as not to overcook the shrimp.
- Freshly squeezed lemon juice (as opposed to the bottle type) is highly recommended.
substitutions
- Spices. Keep the seasoning simple. Use a mixture of dry herbs, e.g. B. Italian spices or herbs from Provence. Or season the shrimp with dried basil, thyme, rosemary, marjoram and oregano.
- lemon juice can be replaced with lime juice if necessary.
- Don't want to use white wine? Use vegetable broth or chicken broth instead.
- Make it dairy free by leaving out the butter and replacing it with extra virgin olive oil or your favorite non-dairy butter alternative.
Variations and Add-ins
- Add capers. They go perfectly with shrimp scampi.
- Add vegetables. Cherry or grape tomatoes, sundried tomatoes, mushrooms, spinach, arugula, asparagus and peppers to name a few.
- Add a splash of cream Add to the Lemon Garlic Butter Sauce for a delicious and delicious cream sauce texture. Use cream or half cream.
- Add pasta, such as spaghetti, linguine or fettuccine. The shrimp scampi with lemon garlic butter sauce should be served with pasta and a slice of crusty bread!
- add cheese. You can sprinkle freshly grated parmesan, asiago, or romano cheese over the shrimp scampi.
- add heat by sprinkling with red pepper flakes.
- pine nuts add amazing flavor. I recommend toasting them in a preheated oven at 180ºC for just 5 minutes until lightly browned. They taste so much better roasted! But be careful, because these nuts can burn quickly. Sprinkle them over the lemon garlic butter shrimp when serving to keep them nice and crispy!
Storage and reheating tips
- Refrigerate Store leftover cooked shrimp scampi in an airtight container for up to 3 days.
- Reheat it in the microwave Heat in 30-second increments until fully heated through.
- Reheat in the preheated oven at 350 F for about 20 minutes or until heated through.
- I do not recommend freezing this dish.
What to serve with shrimp scampi
- Pasta. The classic Italian way to serve shrimp scampi is pasta. I recommend spaghetti, fettuccine, pappardelle or bucatini. You can also use short pasta like fusilli, farfalle (fly pasta), or penne. Cook the pasta al dente for the best texture.
- Bread. Serve this delicious Lemon Garlic Butter Shrimp with a crusty slice of warm Italian bread, garlic bread, or olive loaf.
- rice is a perfect side dish to enjoy the rich lemon garlic butter sauce.
- Fried vegetables. Prepare roasted vegetables such as asparagus, green beans, broccoli or Brussels sprouts as a side dish.
