Rice cake- You can use either salted or unsalted rice cakes. If you LOVE chocolate, you can even try chocolate rice cake!

Chocolate- You can use any easily meltable chocolate. I used semi-sweet chocolate chips because I just had those on hand.

There are a few other items that are optional but recommended. Add to flake salt on top of the chocolate provides a next level taste sensation!


Making a rice cake with chocolate chips is easy! It takes less than 5 minutes to prepare one portion and only approx 20 minutes harden in the freezer before ready to enjoy.

Place your chocolate chips in a microwave-safe bowl and microwave in 30-second increments. Between each set, remove the chocolate and mix with a spoon.

When your chocolate is ready, dip one side of your rice cake into the chocolate bowl. Rice cakes have many divisions, so you may need to use a spoon and pour some extra chocolate on top to ensure it’s completely coated.

Finally, sprinkle with some salt flakes to give the flavor a whole new twist. I can’t recommend it more highly!

This is a very simple recipe, but you can do it SO MANY different variations with it!

  • Top with fresh fruit or a fruit spread
  • Add slivered almonds, marshmallows, or sprinkles while the chocolate is still soft
  • Spread a layer of nut butter on the rice cake before topping it with chocolate

Expert tips and tricks

I recommend blending the chocolate in 30 second increments as the chocolate may harden with prolonged blending. If you find your chocolate isn’t melting well, try adding a teaspoon of coconut oil.

You can’t taste the coconut oil, but it loosens the chocolate and provides a better consistency for drizzling and spreading.

Another tip is to put the chocolate on the “bumpier” side. A rice cake has a flat side and a bumpy side. Adding the chocolate on this side will give you more chocolate on your rice cake!

  • 3 rice cake
  • 1/2 Cup chocolate chips semi-sweet
  • 1 teaspoon flake salt Optional


  • Place 1/2 cup of semi-sweet chocolate chips in a microwave-safe bowl.

  • Microwave in 30-second increments, mixing in between. Repeat until completely melted. If they don’t melt well, add a teaspoon of coconut oil.

  • Dip the top of your rice cake in the chocolate. Use a spoon to fill in any areas that weren’t coated in chocolate.

  • Optional: Sprinkle salt flakes on top while the chocolate is still soft.

  • You can enjoy the chocolate now or place it in the freezer for 20 minutes until the chocolate hardens.
