I recently rediscovered this recipe for S’mores Cookie Bars. After trying these nostalgic and addictive treats again, I’m not sure why they ever crossed my mind. These bars nail the classic s’mores flavor by starting with a graham cracker crust. A soft and thick chocolate chip cookie base overflows with gooey Hershey’s chocolate and marshmallows on the crust.

Enjoy these rich and chewy s’mores cookie bars as they are, or go crazy and serve them a la mode with vanilla bean ice cream.   • Butter – Unsalted butter is preferable for the cookie layer since the recipe includes salt.
  • Sugar – Sweetens this cookie bar and helps it stay moist over time.
  • Brown sugar – It helps with moisture retention, adds chewiness and a hint of caramel flavor.
  • eggs – Bind the ingredients together so the cookie doesn’t get too crumbly.
  • vanilla – Adds its signature aromatic flavor. Use pure vanilla extract.
  • Flour – All-purpose flour makes a sturdy but tender cookie.

How to Make S’mores Cookie Bars

  1. Make the crust by mixing together the graham cracker crumbs, melted butter, and sugar. Press into the bottom of your prepared 9×13-inch baking pan.
  2. Bake the crust at 350°F for 7 minutes. Let it cool down.
  3. In the meantime, make the biscuit base. Cream together the butter and sugar. Be patient, it may take 2-3 minutes for the mixture to become fluffy. Then stir in the eggs and vanilla until the eggs are fully incorporated.
  4. Stir in the dry ingredients until combined, then fold in the chocolate chips and marshmallows.
  5. Spread the cookie dough over the graham cracker crust. Bake 15 minutes. Cover the bars with the broken pieces of Hershey bars, then return to the oven and bake for another 20-25 minutes.
  6. Remove and let cool completely before slicing.

  • Do you love dark chocolate? Instead, use dark chocolate chips along with pieces of your favorite dark chocolate bar instead of Hershey’s bar.
  • If you find that the cookie dough is difficult to spread on the graham cracker crust, lightly wet your fingertips and squeeze the dough out with your hand.
  • Be sure to let the bars cool to room temperature before slicing. That’s because cutting through warm chocolate and melting marshmallows makes a colossal mess!
  • Want a shortcut? Use store-bought cookie dough! Just mix in marshmallows as you push it into the pan.

Where I live they don’t sell graham crackers. What can I use instead?

Graham crackers can be substituted for digestive biscuits or maria biscuits in a pinch. Graham crackers are sweet crackers/cookies/cookies that use graham flour (hence the name) which originated in the United States.

How to save

  • room temperature – Store these bars at room temperature in an airtight container. Eat within 2-3 days. However, if your home is warm, store them in the refrigerator instead.

  • 1 1/2 cups graham crackers, (1 sleeve), crushed

  • 1/3 cup unsalted butter, melted

  • 1/4 cup granulated sugar

cookie layer

  • 1 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 3/4 cup light brown sugar

  • 2 whole large eggs

  • 1 teaspoon vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon of salt

  • 1 teaspoon baking powder

  • 1 1/4 cup mini marshmallows

  • 1 (12 oz) bag of semi-sweet chocolate chips

  • 3 Hershey Bars, broken into pieces

instructions

  1. Preheat oven to 350ºF. . Line a 13×9 baking pan with foil. Put aside
  2. Mix together the graham cracker crumbs, melted butter and sugar. Press onto the bottom of the prepared pan. Bake for 7 minutes until lightly golden brown. Allow to cool slightly.
  3. Cream the butter, sugar and brown sugar in an electric mixer until light and fluffy, at least 2 minutes.
  4. Add eggs and vanilla, beating until fully combined.
  5. Mix in the flour, salt, and baking soda until the flour just disappears.
  6. Using a spatula, fold in the chocolate chips and marshmallows.
  7. Spread the cookie dough over the graham cracker crust. Bake 15 minutes. Top with broken pieces of Hershey Bars.
  8. Return to the oven and bake for another 20-25 minutes, until set and golden brown.
  9. Remove and let cool completely before slicing.
