Description
A soft, moist loaf inspired by the Starbucks pumpkin bread recipe, spiced with cinnamon, nutmeg, and real pumpkin puree.
Ingredients
All-purpose flour – 1¾ cups
Baking soda – 1 tsp
Pumpkin pie spice – 2 tsp
Salt – ½ tsp
Pumpkin puree – 1 cup
Granulated sugar – 1 cup
Light brown sugar – ½ cup
Vegetable oil – ½ cup
Eggs – 2 large
Vanilla extract – 1 tsp
Pepitas – 2 tbsp
Instructions
1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
2. Whisk together flour, baking soda, salt, and pumpkin pie spice.
3. In another bowl, whisk pumpkin puree, sugars, oil, eggs, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. Pour batter into pan, top with pepitas.
6. Bake 55–65 minutes or until a toothpick comes out clean.
7. Cool, slice, and enjoy.
Notes
Use real pumpkin puree, not pie filling.
Cool completely before slicing to retain moisture.
Wrap leftovers tightly to keep soft for days.
