Warm weather makes me crave cool and delicious food and I can’t help but love this Summer Pasta Salad. It’s just so refreshing. The crisp texture of the cucumber and the flavor of the fresh dill goes well with all these colorful summer veggies. It’s a simple and filling lunch that’s so easy to make. And it’s a great way to use up extra veggies.

This great pasta salad is a wonderful dish to serve to your family and friends because it’s healthy, light, and delicious. You can even use whole wheat pasta or add grilled chicken and pine nuts for healthy protein. But before we talk about add-ins, let’s look at the main ingredients for this Summer Pasta Salad.

  • Pasta. I think fusilli works the best here, but you can use any type of pasta you like.
  • Cucumbers. Persian cucumbers are tasty and crunchy, but other types can be used, too. Peel them or keep the skin on.
  • Onion. Red onion, yellow onion, or white onion can be used.
  • Mayo. Make it yourself or use store-bought.
  • Dill. Fresh dill pairs well with the rest of the ingredients. You can also use dry dill instead.
  • Kosher salt and black pepper. To taste.

1. Bring a large pot of salted water to a boil. Add the pasta and cook until tender, about 6 to 10 minutes (check the package for the recommended cooking time). Drain and rinse well under cold water.

2. In a large bowl, place the pasta, cucumbers, dill, and vegan mayo. Add salt and pepper to taste. Stir everything well and serve this easy pasta salad recipe cold or at room temp.

  • Salt the pasta water. This infuses the pasta with salty flavor so this cold pasta salad recipe is absolutely delicious.
  • Slice the veggies thin. You want the cucumbers and onion to be a uniform size and be on the thin side so there aren’t big chunks in this simple summer pasta salad.
  • Let the pasta cool. This easy summer pasta salad recipe is great cold or at room temperature, but allow the pasta to cool before adding the other ingredients to avoid it getting warm.
  • Add cheese. Make this with salty feta cheese, parmesan cheese, blue cheese, or cheddar cheese.
  • Sub different pasta. You can also use penne, elbow macaroni, or color rotini pasta. Just keep in mind that the salad works best with smaller noodles to accompany the chopped vegetables.
  • Add some other fresh vegetables. Along with the cucumbers and onions, this pasta salad could also have chopped carrots, broccoli florets, cherry tomatoes, black olives, bell peppers, green onions, sun-dried tomatoes, artichoke hearts, or sweet corn. 
  • Add some tanginess. If you like tangy acidity, you could add a little bit of lemon juice, a splash of vinegar, red wine vinegar, or some tangy Italian dressing to this creamy pasta salad.

You can store this delicious summer pasta salad recipe in the fridge, tightly covered with plastic wrap or in an airtight container, for about 3 days.

It’s best to eat it sooner rather than later though. So if you plan on making this ahead of time, prepare this perfect pasta salad only a day or so in advance and then give it a good stir before serving.
