Summery quinoa salad with tomatoes, cucumber and fruit

Quinoa can be cooked and cooled ahead of time. The dressing can be prepared 2-3 days in advance. Great salad to prep for picnics, lunches and BBQs. The whole salad can be made the day before, leaving out the almonds until ready to serve.

Any stone fruit such as peaches, plums, or apricots, or a mix of these, works well.

Summery chickpea salad: Omit the quinoa and additionally add a 15-ounce can of chickpeas for a fresh summer chickpea salad. You can also just use a can of chickpeas and add some more fruit, corn, tomato and cucumber. Avocado would be good too.
