The Little Things Newsletter #363 – Live, Laugh, and Lots of Good Food!

Welcome to the weekend, my friends! I’m in Albuquerque this weekend for my nieces’ B’nai Mitzvah and looking forward to a fun day celebrating with them. My sister converted to Judaism many years ago and it is always a pleasure to share these traditions with her family.

ON THE BLOGS this week: Did you know you can make restaurant quality clam chowder in under 30 minutes? It’s easier than you might think!

Roast potatoes, green chili sauce, and black beans with barely wilted baby spinach make a surprisingly delicious combination in this breakfast hash recipe.

Sweet, gooey, and just a little spicy, this chicken stir fry is a quick and easy weeknight dinner.

Creamy avocado chunks are combined with tender chicken pieces in a fresh and slightly tangy dressing in this Avocado Chicken Salad.

Enjoy a delicious blend of fresh, ripe vegetables with a flavorful homemade vinaigrette in this Zucchini Pasta Salad. This is a recipe you will be making more than once this summer.

Dive into this timeless flavor combination of hearty chicken, sticky mozzarella and marinara sauce nestled in tender-crisp pumpkin and topped with toasted breadcrumbs. These Chicken Parm Zucchini Boats are a huge hit!

These Mashed Parmesan Potatoes are the happy marriage of fluffy, tender insides and deliciously crunchy edges. Each flavorful bite will make your taste buds dance.

Dip into a bowl of strawberries and cream and you’ll see why it remains a classic. This quintessential summer combination of sweet, tangy fruit and velvety smoothness will have you gorging on every bite.

Rich banana ice cream, decadent chocolate chips and crunchy walnuts create a tantalizing treat you won’t soon forget. Chunky Monkey Ice Cream is the perfect late night treat.

What I crave: Covered in a gooey, sweet and tangy marinade, these BBQ pork skewers sound amazing. I’m so ready for BBQ season.

my favorite thing This week is this magnetic phone holder. I’ve used a few other holders on our vehicles over the years and this style holds up against all the others I’ve tried. It took me a minute or two to figure out how to install it, but this very simple phone holder is an absolute win. I’ve been using it for about six months and it’s perfect.

What I read: He Who Fights with Monsters 7: A LitRPG Adventure by Shirtaloon and Travis Deverell. Like the other books in this series, this was a fun read – and a fun audio book too. My 17 year old flew through these books earlier this year when the newer ones came out and was chasing me to catch up.

What I hear: This is the blessing said before the Torah reader reads the aliyah or section of the weekly Torah section. I’ve been listening and practicing this week in preparation for my nieces’ ceremony this weekend.

“Better a small portion of vegetables with love than a fatted calf with hate.” Proverbs 15:17 NIV

Have a great week full of little things that make you smile!
