Tofu-rific Chocolate Pudding – Vegan Action

Indulge guilt free in our Tofu-rific chocolate pudding parfait! This delightful treat combines organic silken tofu, rich cocoa, chia seeds, vegan semi-dark chocolate chips, a hint of maple syrup and a dash of espresso powder for an extra layer of decadence between a smooth coconut cream. It’s chocolatey goodness, but with a healthier twist! 

Servings: 8


  • 2 16oz Simple Truth Organic Silken Tofu
  • 4 tbsp chia seeds
  • 4 tbsp organic cocoa
  • 1/2 cup maple syrup 
  • 1 tbsp vanilla extract 
  • 1 tsp espresso powder
  • 1 tsp refined coconut oil  
  • 1 cup vegan semi-dark chocolate chips
  • 1 13.5oz Nature’s Charm Coconut Whipping Cream, refrigerated overnight 


  • In a microwave safe container, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until the chocolate is completely melted. 
  • In a food processor, blend silken tofu, chia seeds, cocoa, maple syrup, vanilla and espresso powder until smooth. Pour in the melted chocolate and continue blending ensuring the mixture reaches a silky pudding consistency. 
  • Assemble the parfait by layering the Tofu-rific Chocolate Pudding and coconut whipping cream. Sprinkle with a dash of coffee grounds, adding an extra burst of flavor.
