If there was ever a dish that defined summer, this Tomato Cracker Salad would do it for me.
Now I have to admit that people look at it a little wrong at first. I even received a few negative reviews for my cookbook because of this recipe. I mean it’s tomatoes, crackers, salt and black pepper. I get it. It’s super simple and a bit weird. But you have to look beyond the few ingredients and look at the whole as a whole. Imagine the beloved and coveted tomato sandwich… except in delicious salad form. If you are a fan of tomato sandwiches, give it a try!
What is Tomato Cracker Salad?
Garden-fresh tomatoes are combined with salt crackers, mayo (you know, Duke’s is my favorite brand), and some salt and pepper for a dish my family has enjoyed for as long as I can remember. If you love the taste of the classic tomato sandwich, you’ll probably love this one too!
Fresh, home-grown tomatoes in season are best. Old tomatoes are even better. I’ve even seen some people add diced green onions. Sounds delicious!
How Do I Store Tomato Cracker Salad?
All of you, the truth is… you shouldn’t. Tomato Cracker Salad is best served right away. This is a side dish I would save to prepare just before or when the company arrives. The water in the tomatoes and mayonnaise can cause this dish to go soggy pretty quickly. If you would like this dish to have a longer shelf life, place your tomatoes on a paper towel and allow the paper towel to soak up some of the moisture.
The good thing is that this isn’t usually a problem as every company I’ve ever had too much from usually gobbles it up before I can hardly put it down. Enjoy!
How do you sow tomatoes?
- Wash your ripe tomatoes thoroughly, removing dirt and debris.
- Cut your tomatoes in half horizontally.
- Hold your tomato halves, cut-side down, over the sink or bowl.
- Carefully scoop out the seeds and slime with a spoon or your finger.
Bonus tip: You can save your seeds for planting! Simply rinse them in a fine mesh strainer to remove any remaining goo. Then, spread the seeds out on a paper towel for a day or two until completely dry. Store them in a jar or dry envelope in a dry, cool place until you’re ready to plant them.
