Our croquettes are inspired by classic Italy crochet and the Spaniards Ham croquetas. We took away the bechamel, eggs and ham and brought in mashed potatoes, flaxseed and meaty king oyster mushrooms. They are so delicious you won’t believe it 100% vegan.

As a substitute for the tasty chunks of ham you get in Spanish croquettes, we’ve turned to meaty king oyster mushrooms. We chopped them finely and sautéed them with garlic and smoked paprika until crispy. They give the porridge a spicy smoky flavor!
We used vegan “flax egg” and crispy panko breadcrumbs for the breading, but we give other options in the tips below. And finally, we baked the croquettes instead of frying them to keep the fat down.
