I’ve made it a challenge to eat at least one cup of veggies with every meal (my goal is 5 cups a day). Lunch or dinner is usually pretty basic, but breakfast can be a challenge. I was thinking about zucchini bread and wondering what would happen if I added zucchini to oatmeal. It was delicious – you can’t even taste the zucchini! Of course, I sweetened the Zoats with ripe bananas and topped them with blueberries and almonds. You can make this zucchini oatmeal recipe with so many toppings like these cinnamon apple spiced oatmeal, peanut butter oatmeal, and pumpkin spiced oatmeal.

I’ve been adding non-filling veggies to every meal for the past few months and have enjoyed the challenge. Most vegetables are high in fiber and low in calories, so they help me feel full without eating a ton of carbs or fat. The following are some other benefits of eating a variety of vegetables every day:

Zucchini Oatmeal Ingredients

  • Zucchini: Peel seven ounces of zucchini and pulse in a food processor. You can also grate the zucchini with a box grater.
  • Banana: Mash half of a ripe banana.
  • Protein: You can buy runny egg whites or separate the yolks from the whites until you fill a third cup.
  • Oats: Use a third cup of oatmeal.
  • Milk: Make these zoats with whatever milk you prefer, like 2% coconut or almond milk.
  • Cinammon: Stir some cinnamon into the oatmeal and sprinkle more on top.

How to make zucchini oats

  1. Combine In a small saucepan, place zucchini, banana, egg whites, oatmeal, milk, and cinnamon and turn heat to medium-high.

  • 1/2 ripe banana, mashed
  • 1/3 Cup protein
  • 1/3 Cup oatmeal
  • 1/3 Cup milk of your choice
  • 1/8 teaspoon Cinammon, plus more for the topping
  • 1/4 Cup blueberries
  • 1/2 ounce slivers of almonds
  • In a small saucepan, combine the first 6 ingredients, zucchini with cinnamon and turn heat to medium-low.

  • Cook, stirring, until oats are creamy and cooked through, about 3 to 5 minutes depending on the oats.

  • Pour into a bowl and garnish with blueberries, slivers of almonds and the remaining cinnamon.
