A vibrant and refreshing summer peach burrata salad featuring grilled peaches, creamy burrata, sweet corn, fresh basil, mint, and a hot honey vinaigrette. Ready in just 20 minutes
Ingredients

¼ cup extra-virgin olive oil

2 tbsp sherry vinegar

1 tbsp hot honey

1 garlic clove, minced

½ tsp kosher salt

2 peaches, sliced into quarters

3 ears fresh corn, shucked

¼ cup minced shallots

¼ cup basil leaves

3 tbsp chopped fresh mint

1 (4 oz) ball burrata cheese

¼ cup roasted, salted pistachios
Instructions

Make vinaigrette: whisk oil, vinegar, honey, garlic, salt.

Grill peaches 2–3 mins per side.

Cut corn from cobs. Mix with shallots, herbs, and half of the dressing.

Assemble salad on platter. Top with peaches and burrata.

Drizzle rest of dressing. Sprinkle with pistachios and extra basil.
